This Madrid-based Chef decided to leave his university studies and devote himself to the kitchen after he met Itammae Sr Masaya Ohama at the restaurant Robata, in Madrid. In his veins there where already some japanese influence and you can clearly see it as a signature of this Chefs dishes. After going through several restaurants in Madrid such as Suntory, Teppanyaki with Mr. Kenjiro Sato, Tsunami, Zen Market, it was in Antwerp that Chef Kenichi perfected the technique of cutting fish and preparing hot dishes with Chef Hiro Ishizawa and Itamae Sr. Kenji Kurazawa.
In Chef Kenichi speech you can find the serenety typicaly characteristic of the Buddhism culture, where he is looking for inspiration to achieve his new goal: specialize in Buddhist vegan cuisine and traditional Kyoto tapas.
Chef Kenichi makes tradition an art taken to the plate.
