I have always been fascinated by the sea. I live near the beach and intend to keep this proximity throughout my life. I have always had a great respect for seafood and I always try to elevate it as much as possible in my dishes. This menu boils down to this, while still referring to one of the best Chefs in the world (who I was privileged enough to meet and work with): the menu ends with an idea that is 100% his. And what a way to end it!
