Having started as a self-taught cook, Borja Letamendia’s over 20-year long career as a professional cook has been nothing short of remarkable. Starting with a 4-year experience with the Oyarbide family, at the 2 Michelin-starred restaurant Príncipe de Viana, Chef Borja later moved to Mexico as Owner and Executive Chef of the Hotel Casa Colonial in Cuernavaca (5 Michelin stars). He then came to London where he worked closely with two of the most renowned Chefs in the world. This includes Chef Heston Blumenthal, with whom Borja Letamendia worked at The Fat Duck (3 Michelin Stars) and as the Executive Sous Chef at the Michelin-starred Hinds Head. And Chef Marco Pierre White, having headed his 3 Michelin-starred restaurant by the same name.
In 2012, Chef Borja returned to Spain as Executive Chef at the Palacio de Cibeles with Adolfo Muñoz, having led other projects in Madrid and in the Caribbean, and participated in the TV show Top Chef’s first edition in Spain.
