A Chef born and raised in a small town in the south of Sicily.
He first began to revolutionise the kitchen at his family restaurant.
Any event was a perfect occasion to enjoy serving guests and learn about genuine hospitality, flavours and fresh ingredients.
He left economics to devote himself to his passion entirely. Finished his studies at the University of the Spori of Perugia and moved to Madrid.
In Albora, a restaurant with a Michelin star, his career starts taking shape, and he discovers his true culinary philosophy. Respect for seasonal flavours and enormous care for the selected raw materials.
After experiences at Bosco de Lobos, La Porcineria and La Cabra (awarded with a Michelin star). The product is always the protagonist of his signature cuisine.
His technique and the smells and flavours that his dishes convey are the results of his love for the Mediterranean diet.
